Summary: If you are dieting, you’ve made a wrong turn and ended up way too far from home! This is a sticky, gooey, sugary delight that really is a coma waiting to happen. Because it is so deliciously decadent, a smaller slice is perfectly acceptable and therefore it would be a perfect dish to make for any gathering. People will love you and beg you tell them your secret recipe. And if you tell them, they will be shocked at how easy this is to make. You can make it ahead and serve it cold or whizz it together just beforehand and serve it warm. Either way, it is delicious! Come on, there’s chocolate cake and caramel sauce and marshmallow – what’s not to love?
I used a packet of Coles Chocolate Cake Mix for this (a bargain at $0.75) and a jar of Caramel Sauce that was right there in the baking isle but of course, you could make either from scratch but I was keen to keep it easy. I wanted all my marshmallows to be white, so I bought two packs of pink and white marshmallows and Mr Ask polished off the pink ones later. If you can find a bag of all white, one pack is sufficient or you can use two like me.
Ingredients
- 1 pkt chocolate cake mix plus ingredients listed on the packet
- 1 (340g) jar caramel sauce
- ¼ tsp salt
- 1 (280g) bag marshmallows
Instructions
- Pre heat the oven to the temperature indicated on the cake mix you are using.
- Mix up the cake mix to the packet directions.
- Pour into a greased 9” x 13” or 23cm x 33cm baking tin, dish or foil tray.
- Bake as directed.
- As soon as the cake is cooked, remove from the oven and use the handle of a wooden spoon to poke holes into the cake.
- Pour the caramel sauce over the cake and sprinkle with the salt. Allow the caramel to soak into the cake for at least 30mins (if serving warm) or until cool (if serving cool).
- Top the cake with marshmallows. Place topped cake under the griller/broiler and allow them to melt and become toasty.
- Allow to sit for 5mins (or longer) before serving. Enjoy your diabetic coma in a bowl!
