Summary: I could eat pasta at every meal, I love it’s comforting carbs. This dish is quick, tasty and creamy. Keep the fat down by using low fat cream cheese and feel free to increase the veg by adding a bag of baby spinach. This is quite versatile and you could throw in whatever you like.
Ingredients
- 500g dried pasta
- 3 cooked chicken breasts, sliced
- 2 bunches broccolini
- 2 tblsp butter
- 1 clove garlic, minced
- 250g cream cheese, cubed
- 1 1/2 cups vegetable stock
- 1/2 tsp dried thyme
- 1/4 cup grated Parmesan, plus extra for serving
Instructions
- Put the pasta on to cook as per the packet directions, adding the broccolini for the last 5 mins.
- Meanwhile, add the butter and garlic to a large fry pan and cook for 2 mins. Add the cream cheese cubes, stock, thyme and whisk until a smooth sauce forms. Add the parmesan and whisk.
- Add the pasta, broccolini and chicken to the sauce and toss to coat.
- Serve with Parmesan.
