Summary: There is nothing I love more than caramel. Whilst I am firmly in the caramel camp, Mr Ask is all about chocolate. Anyway, if you are unfamiliar with dulce de leche, Wikipedia describes dulce de leche as a sweet prepared by slowly heating sweetened milk to create a product that derives its taste from caramelised sugar. Literally translated, it means “candy of milk”. I will totally forgive you if you don’t bother to cook the chocolate cake that goes with this icing. But the icing is so good you have to make it, even if you put it on a packet mix or just eat it from the bowl!
Ingredients
- 250g salted butter, softened
- 500g icing sugar
- 1/4 cup cream
- 1 tsp vanilla
- 1 (395g) can NestlĂ© Top’n’Fill
Instructions
- Using a stand mixer or electric beaters, beat the butter until smooth and add icing sugar a bit at a time. Add the vanilla and cream and beat for 10mins. Yes, 10 minutes!
- Add the caramel and beat until well combined and smooth. Be careful not to over beat the caramel, it can become grainy.
- The icing should be nice and fluffy ready to pipe or spread on your cakes.
- Makes enough for 24 cupcakes or a 2 layer 20cm cake.
