Recipe: Easy Doughnut Holes

Summary: Who doesn’t love a hot cinnamon doughnut? These are really easy and addictively delicious. If I knew I could be making these so easily, I would have been doing it ages ago. Even easier if you have a deep fryer but you can use a saucepan with oil too

Ingredients

  • 1 1/2 cups plain flour
  • 1/3 cup castor sugar
  • 2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup buttermilk or natural yoghurt
  • 1 egg, lightly beaten
  • 2 tblsp butter, melted
  • Oil for deep frying

Instructions

  1. Add the flour, castor sugar, baking powder and salt to a large bowl. Add the egg, butter, vanilla and yoghurt/milk and stir well to combine.
  2. Heat a deep fryer to 190C (or heat vegetable oil in a saucepan) and drop heaped teaspoonfuls of batter into the oil, a few at a time. I got a great, round shape using a cookie scoop. Fry for until browned, 30 secs or so per side.
  3. Drain on paper towels and roll in cinnamon sugar or icing sugar or dip in an icing glaze. You can fill them with jam using a syringe from the chemist. They are lovely dipped in maple syrup or strawberry sauce.
