Ingredients
- 1 1/2 cups fresh lemon juice
- 2 tblsp lemon zest
- 1 1/2 cups castor sugar
- 6 eggs, room temp
- 250g cold butter, cut into cubes
Instructions
- Strain the lemon juice into a large, heavy based saucepan. Add everything else.
- Cook over low heat whisking constantly until thick enough to hold marks from whisk and first bubbles appear on surface.
- Pour into sterilized jars. Keeps in the fridge for up to 4 weeks in an airtight container.
