Summary: This is a simple and easy homemade version of the comfort classic – tinned tomato soup. A bowl of this and a toasted sandwich will soothe your soul. The recipe specifies tinned tomatoes but a kilo of fresh tomatoes skinned and chopped works wonderfully.
Ingredients
- 1 tblsp olive oil
- 1 onion, chopped
- 1 clove garlic, minced
- 2 (400g) tins of crushed tomatoes
- 1-2 cup strong stock
- 1 tsp sugar
- Salt
- Pepper
- 1 bunch basil, leaves chopped
Instructions
- Add the oil, onions and garlic to a large saucepan. Fry for a few minutes until the onion softens.
- Add the tomatoes and stock until the soup is your desired thickness. Season well with salt and pepper and add the sugar. Cook for 10-15 mins, stirring occasionally.
- Turn the heat off and stir through the basil. Blend with a stick blender till smooth.
- Serve with a sandwich or good crusty bread.
