
Summary: The second we get some sunshine, you’ll find me making this salad! It’s so delicious and refreshing on hot day and yet it’s dead simple to make. I really can’t believe I haven’t shared this before. The watermelon is sweet and cool, the cucumber is green and crunchy and it just feels like summer. Feta and red onion keeps things beautifully savoury and gives a sharp and creamy finish. It’s the perfect thing to bring to summer BBQ or to brighten up a weekday meal. But if you really love it like I do, you might find you polish of a whole serving bowl for lunch – oops!
Ingredients
- 1 chunk (approx 1.7kg) watermelon, chilled
- 1 cucumber
- 200g Danish style feta
- 1 small red onion
- Balsamic glaze, optional
Instructions
- Cube the watermelon, cucumber and feta and add to a large salad bowl.
- Slice the onion into half moons and add to the bowl.
- Toss well to combine. Drizzle with balsamic glaze just before serving, if desired.
