Ingredients
- 1/2 kg baby potatoes
- 4 small corn cobs
- 1 bunch asparagus
- 250gm green beans
- 1/2 punnet grape tomatoes
- 1 bunch radishes
- 50ml garlic olive oil
- 1 tsp mustard (Australian Style or Dijon)
- Juice of a large lemon
- Salt and pepper
Instructions
- Can be served warm, room temp or cold.
- Boil baby potatoes till tender, corn till just tender and blanch asparagus and green beans till crisp tender. I use one pot.
- Wisk together oil, mustard, lemon juice, salt and pepper to make the dressing.
- Toss everything together while warm.
Quick Notes
You can then serve warm or cold with steak, chicken, fish or for me the vego, grilled haloumi cheese.
