Summary: I am gearing up for salad season! This sweet and tangy salad will be a hit at the dinner table or at your next BBQ. Crunchy, sweet/tart apples balance out the iron-y earthiness of spinach. Then you have oh so salty and creamy feta (oh how I love a salty surprise in my salad) and the whole thing is crowned with almonds. So seriously good! And the mustard maple dressing is amazing on almost any salad. Mr Ask isn’t a fan of spinach in salads but he had second helpings of this both times we had it. I’m sure this will be your new go to salad!
Ingredients
- 280g baby spinach
- 3-4 small gala apples, cored and thinly sliced
- 1-2 tblsp lemon juice
- 70g toasted almonds, chopped
- 200g Danish feta cheese, chopped
- 1/2 bunch spring onions, finely sliced
Mustard Maple Vinaigrette
- 1/4 cup garlic olive oil
- 1/4 cup white wine vinegar
- 2 tblsp pure maple syrup
- 2 tsp Australia (or dijion) mustard
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
Instructions
- Toss the apples in a little lemon juice before adding it to the salad.
- In a large salad bowl toss together spinach, apples, spring onion and feta.
- For the dressing, add all the ingredients to a measuring jug and whisk together.
- When you are ready to serve, drizzle desired amount of dressing over salad and toss to evenly coat. Serve immediately after adding dressing.
