Summary: Just when I think I’ve made every possible creamy potato recipe, I find something new. Says something about how I feel about starchy, creamy foods….. This was one of those ‘hmm, what’s in the fridge’ creations but it was sooo good! The dill is amazing in this and makes everything taste fresh. If I’d had a little more planning I would have cooked fish instead of steak, dill and fish being a classic pairing.
Ingredients
- 1kg baby potatoes
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tsp capers, chopped
- 3 stalks fresh dill, minced
- 1 handful parsley, minced
- 1/2 bunch chives, snipped
Instructions
- Boil or steam the potatoes (whole, halved or quartered, depending on size) until just tender.
- Mix the sour cream, mayo, capers and herbs thoroughly until well combined.
- Serve potatoes with a generous dollop of herb cream.
