Recipe: Battered & Baked BBQ Cauliflower {Vegan Wings}

Summary: There are a zillion versions of vegan ‘wings’ out there and I have tried a few but this is my favourite! A good coating of crispy yet delightfully chewy batter and a tangy sauce that has a tingle of chilli. Mr Ask is the deep fryer King and has insisted that these sort of cauliflower treats should be deep fried but even he had to admit that these were perfect! They are an awesome snack but you could easily add them to some rice with some veggies or put them with some steamed veggies to make them a meal. Even though I’ve intended to make these part of a meal, it just never happens because we start snack and then they are gone! You might be thinking that these are a bit of a faff to make but they are really quick. Because they are oven cooked and not deep fried, they battering goes quickly and you don’t have to wait for things to fry. Minimal mess and minimal fuss and so delicious to boot. Give them a go today…

Ingredients

  • 1/2 head of cauliflower (about 700g), chopped into florets

For the batter:

  • 3/4 cup plain flour
  • 2 tsp onion powder
  • 2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/2 cup non-dairy milk
  • 1/2 cup water

For the sauce:

  • 1/2 cup vegan BBQ sauce
  • 1/4 lemon juice
  • 2 tblsp non-dairy butter, melted
  • 1 tblsp tomato sauce
  • 1 tsp vegan Worcestershire sauce
  • 1 tblsp srirachia (more or less to taste)

Instructions

  1. Preheat the oven to 230C and line a large baking tray with baking/parchment paper.
  2. Add the batter ingredients to a large bowl and whisk until well combined.
  3. Dip the florets into the batter, being sure to coat well. Tap off excess batter and place on the baking tray. Repeat until all florets have been battered.
  4. Bake the battered Cauliflower for 25-30 minutes.
  5. While the Cauliflower is cooking, whisk together the sauce ingredients in a large bowl.
  6. Remove the cauliflower from the oven and toss in the sauce.
