Summary: Okay, it’s a silly name. It came from a joke about a certain morning show presenter (no longer on the air) with a bad wig and the name just stuck. Despite the name, these are delicious patties that are very health and budget conscious. Mr Ask swears they taste meaty.
Ingredients
- 2 (400g) tins four bean mix, drained
- 10 slices of wholemeal bread
- 2 onions, roughly chopped
- 4 large cloves of garlic
- 1 tblsp vegetable stock powder
- chilli to taste
- 2 eggs
- 200g grated cheese
- For the toupees
- 1/4 cup tahini
- 1/2 cup natural yoghurt or sour cream
- 1 lemon, juiced
- 1 tsp salt
- 1/4 tsp cayenne
- 1 clove garlic
- 3 spring onions
Instructions
- Pre heat oven to 180C.
- Process the the bread in the food processor until crumbs and place in a large bowl with the cheese.
- Add the onions and garlic to the bowl of the processor and pulse till chopped. Add drained beans, stock, chilli and egg and process till combined. Add this mix to the crumbs and cheese.
- Mix everything together, it will be fairly damp. Form into 12 patties and place on a lined baking tray and bake for 40mins or until browned. They firm up as they cook but are still a softer pattie.
- To make the sauce, add everything to the food processor and blitz till smooth.
- Serve with salad or in a burger.
