Summary: This Danish recipe is the taste of Mr Asks childhood. It’s a humble but delicious meal that would work at any time of day. It’s also a great way to use up the last of a roast. Mr Ask prefers left over roast pork belly but you can use beef too. Biksemad is often served with an egg or two sunny side up, a side of tinned beetroot and dark rye bread plus lashings of tomato sauce. You can add other veggies into the mix too.
Ingredients
- 100g butter
- 2 onions, chopped
- 700g cold boiled potatoes, chopped to a 1cm dice
- 500g cooked pork or beef, chopped to a 1cm dice
- Salt, to taste
- Pepper, to taste
- 4-8 eggs (optional)
- Tomato sauce, to serve
Instructions
- Melt the 1/2 the butter in a skillet, add the onions and saute until golden. Remove from pan and keep warm.
- Add the remaining butter to the skillet and saute the potatoes until they begin to brown. Add cubed pork or beef and cook for 2–3 minutes.
- Return the onions to the pan and cook until everything is hot through.
- If you are adding an egg or two, fry sunny side up and serve with the yolk soft. Serve with tomato sauce.
- Serves 4
