Recipe: Blackberry Champagne Cocktail

Summary: I just adore berries, especially blackberries. So when I saw blackberries on sale, I had to make a blackberry cocktail. I think this would work okay with frozen berries too. This fruity cocktail would make a perfect brunch cocktail.

Ingredients

  • 600ml Champagne or Australian Sparking White
  • 1/3 cup of blackberries
  • 120ml crème de cassis
  • 1/2 lime, juiced and zested
  • 1/2 cup blackberry or crranberry juice

Instructions

  1. Place blackberries in a large jug with the crème de cassis and toss to coat. Using a muddler or wooden spoon, crush berries into the crème de cassis.
  2. Add the blackberry and lime juices and zest, stir to combine.
  3. Pour the Champagne or Australian Sparkling White into the jug and stir gently.
  4. Pour into cocktail glasses and ENJOY the weekend xxxxx
