Recipe: Brandy Snap Baskets with Ganache and Fruit

Summary: So many of my favorite things in one dessert, dark chocolate, cream and fruit! All wrapped up in a brandy snap basket. I cheated and bought these baskets but I will have a recipe for brandy snaps up soon.

Ingredients

  • 8 brandy snap baskets
  • 200g good quality dark chocolate, chopped
  • 1 tsp vanilla extract
  • 3 tbsp icing sugar
  • 300ml whipping cream
  • seedless grapes or blueberries
  • strawberries

Instructions

  1. Melt in the chocolate in microwave on medium, in 30 sec bursts, stirring each time till melted. Do be careful not to burn it! Allow the chocolate to cool at little while you whip the cream.
  2. Whip the cream, vanilla and sugar together until the cream is at soft peak. Fold the chocolate into the cream gently and divide between the brandy snap baskets.
  3. Arrange the fruit on top of ganache and decorate with icing sugar, chocolate curls, flake or extra cream.
