Summary: This is always a crowd pleaser! To me it’s a perfect comfort food, nice and cheesy yet the fresh veggies allow you to feel healthy and a little virtuous. I will also admit to eating this dish cold, straight from the fridge with a spoon. It’s still pretty good! I’ve even made Broccoli Cheese Stuffed Bread. Anyway, I used a blend of Cheddar, Parmesan and Gouda but as always, use what you have on hand. This has a dried breadcrumb topping but Mummy Ask always used cornflake crumbs for extra crunch.
Ingredients
- 1 large head broccoli, cut into florets
- 1/2 head cauliflower, cut into florets
- 2 tblsp butter
- 2 tblsp flour
- 1 1/2 cups milk
- 2 1/2 cups cheese, grated plus extra for topping
- 1 tsp dry mustard powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tsp dry breadcrumbs
Instructions
- Pre heat oven to 190C-220C, depending on what temp the oven needs to be on for any other dishes you are cooking.
- Add the broccoli & cauliflower to a microwave and oven safe casserole dish. Microwave veggies until just tender, about 10 minutes in my microwave.
- Melt the butter in a saucepan and add flour and cook for around 3 mins, stirring often. Add milk and whisk until mixture becomes thick and bubbly. Add salt, pepper, mustard. Once thickened add the cheeses, whisking until the cheeses are melted and turn off heat.
- Pour the sauce over the veggies in there baking dish. Sprinkle with the bread crumbs and cheese to taste. Bake for 20 minutes or until browned on top and hot through.
