Ingredients
- 2 cups SR flour
- 1/2 tsp salt
- 2 eggs
- 2 tsp vegetable oil
- 2 cups buttermilk
Instructions
- Mix together all the dry ingredients and make a well in the centre.
- Beat eggs, oil and buttermilk together and add to dry ingredients, whisking until a smooth batter. Add a little more buttermilk if you want a thinner pancakes.
- Pour the batter into medium hot oiled pan. Turn over when bubbles appear on the top and cook the other side until golden.
- Serve warm with berry sauce and whipped cream & whipped butter and maple syrup.
Quick notes
If you don’t have buttermilk add 1 tblsp of lemon juice or white vinegar per cup of ordinary milk and allow to stand for 10 mins before using.
