Recipe: Caramelised Onion & Mushroom Melt {Quick Vego Lunch or Light Dinner}

Summary: Sometimes, when it’s cold and rainy outside and the day has been long, you just need comfort food. This melt is perfect for those comfort cravings but the mushrooms bring a little nutritional value to this meal. Mushrooms are great because they are full of important nutrients, including selenium, potassium, riboflavin, niacin, vitamin D, vitamin B6 and more. Everyone in the family has been going nuts for sandwich thins lately. They’re sort of like an all crust piece when toasted and we all know the crust is the best part! I was imagining this onion & mushroom melts on a sandwich thin with potato gems (or tots if you are in the US) on the side for that American diner food vibe but vegetarian. If you wanted to keep this vegan, swap the dairy cheese for a vegan cheese that will melt. I was right about the gems, they were the perfect side to this scrumptious sandwich! 
Ingredients
  • 2 Tblsp garlic olive oil
  • 1 large onion, sliced into half moons
  • 200g mushrooms
  • 1/4 tsp fresh thyme leaves
  • 1/8 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 sandwich thins, toasted
  • 4 slices vintage cheddar cheese

 

Instructions 

  1. Add the oil to a skillet over medium heat. Once the pan is hot, add the onions and mushrooms to skillet. After about 5-7 minutes you will notice the mushrooms ‘sweating’, little beads of water coming to the surface. Wait another minute and then toss around quickly, and leave them again. Wait about 5 more minutes. By this time their colour should be turning a rich brown, and you can toss around a couple more times. Once they are a caramel colour, they are done.
  2. Sprinkle thyme and salt and pepper over mixture and stir.
  3. Spray the plates of a sandwich press with a little spray oil and lay down a the sandwich thins, top with cheese, mushroom & onions mix and second layer of cheese and top with the other half of the sandwich thin. Press until golden brown and crispy.
  4. Remove from the sandwich press and cut in half before serving.
