Recipe: Cheats Soup II – Potato, Leek & Bacon

Summary: A little while ago I posted a recipe called Cheats Soup that received quite a good response – so I thought another one was in order! Now, I know that instant mash potato has a pretty bad rap but it does make this recipe oh so quick and simple. When I’m keen to get dinner on the table, potato and leek soup just doesn’t get a look in. All that peeling and chopping before you even start cooking! You could used pre chopped bacon in this but I find snipping with scissors doesn’t take long. P.S.- Cheats Soup III, Minestone has been added here.

Ingredients

  • 3 rashers bacon, chopped
  • 1 leek, white parts chopped
  • 1 (115g) pkt instant mash potato (I like the kind with onion)
  • 6 cup beef stock
  • Sour cream, optional
  • Cheese, optional

Instructions

  1. Fry the leeks and bacon in a saucepan. You may need depending on the fattiness of your bacon.
  2. Once your leeks are soft and your bacon is crisped to your liking add the instant mashed potato and stock.
  3. Cook on a med low heat for 10 mins, stirring often. Taste and season as needed. You can thin it with more stock if desired.
  4. Serve with a dollop of sour cream and grated or shaved cheese.
