Summary: This is so easy, it’s embarrassing! I truly having been meaning to share it for over a year but it gets made when time is too tight or can’t be bothered nights and I never remember to take photos! It all started when I was sick one day and fancied a nice veggie soup but there was no one to make it but me and I really did not trust myself to stand and chop veggies without falling over or cutting myself! It’s been a go to meal ever since. I recommend using stock powder in this to boost flavours to your tastes. PS – I’ve also added Cheats Soup II – Potato, Leek & Bacon and Cheats Soup III – Minestrone
Ingredients
- 1 (400g) bag diced soup veg
- 1 tblsp garlic oil
- 1/2 cup soup pasta
- 1L stock
- Ground pepper, to taste
Instructions
- Add everything to a pot. Simmer for 30mins or until pasta is cooked and veg is tender.
- Serve with toast – that’s it!
