Summary: This is a great, quick meal for a weekday and a hit at a BBQ. You can cook a whole steak and slice it finely if you prefer but Mr Ask is just as happy with beef strips.
Ingredients
- 500g steak or beef strips
- 4 long bread rolls or 1 long French stick, cut into 4 lengths
- 2 tblsp garlic oil
- 1 onion, sliced
- 1 capsicum, sliced
- 1 tsp Mexican seasoning
- 150g cheddar cheese, sliced finely
Instructions
- Sprinkle the mexican seasoning over the meat.
- Cut the rolls in half length wise and tear out a little bread from each side (you can use this for breadcrumbs in another recipe).
- Add 1 tblsp oil to a fry pan and fry the onions and capsicum to your desired ‘doneness’. Set aside and cover to keep warm.
- Add the remaining oil to the fry pan and fry the seasoned meat until cooked to your liking, slice steak, if using.
- Arrange the onion mixture and meat in the rolls and top with cheese. You can melt the cheese a little more under the grill if you want.
- Serve with a crisp salad and optional tomato sauce.
