Summary: I really tried to do this one without a candy or meat thermometer but I couldn’t nail it. All the same it’s very easy and candy/meat thermometers are cheap and easy to come by.
Ingredients
- 250g butter
- 1 cup brown sugar, firmly packed
- 1 (395g) can sweetened condensed milk
- 150ml golden syrup
- 1 tsp vanilla
Instructions
- Melt butter in 2L microwave container. Add everything else and give it a stir, it doesn’t have to be completely combined.
- Cook in the microwave on high for 5mins and test with thermometer. You are looking for a temp of 115-120C.
- If you are not there yet, continue on in 1 min bursts till you are. Don’t be tempted to go for a 5min burst or you may burn it as I did the first time! It took me 10 mins in Mummy Asks viciously powerful microwave.
- Once you have the right temp, stir well (don’t stress if it seems a little grainy) and pour into a lined lamington tin and allow to cool completely at room temperature.
- Cut into bite size pieces with kitchen scissors and wrap individually (or not if you don’t feel the need) in waxed paper and store in the fridge.
