Summary: These are great for a quick lunch with your choice of fillings, I love cheese, onion and refried beans. Served here with Mexican beans & rice.
Ingredients
- 8 flour tortillas (I use wholemeal)
- 400g cheese, grated
- 400g cooked, shredded chicken
- Sliced onion, optional
- Diced capsicum, optional
- Minced fresh chilli, optional
Instructions
- Heat a frying pan until it’s hot, spray with a little oil. Add a tortilla to the pan, sprinkle with 1/4 of the chicken and any of the options you have chosen.
- Sprinkle with 1/4 of the cheese and top with a second tortilla.
- Flip the quesadilla once browned and brown second side.
- Repeat with remaining tortillas.Serve cut into quarters.
