Recipe: Chilli Two Ways

Summary: Con Carne with beef or Non Carne vegetarian or even in the slow cooker!

Ingredients

  • Vegetable oil
  • 1 onion, chopped
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tblsp dried oregano
  • 2 stalks celery, finely chopped
  • 1 capsicum, chopped
  • 1/4 tsp cinnamon
  • 1/2 tsp unsweetened cocoa
  • 1 cup corn kernels
  • 1 long red or green chilli, minced (can omit or increase to taste)
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes
  • 1 cup tomato puree or pasata
  • 1 tsp chilli powder (optional)
  • 1 tablespoon ground black pepper
  • 1 can kidney beans, drained & rinsed
  • Salt & pepper, to taste
  • OPTIONS:
  • 500g minced beef OR
  • 1 can mixed beans, drained & rinsed

Instructions

  1. Add a little oil to your pot and fry the onions and garlic together until translucent. Add cumin, oregano, cinnamon, cocoa, paprika, fresh chilli, chilli powder, celery and capsicum and fry for one minute.
  2. If using beef, add it now and cook until browned.
  3. Add tomatoes, puree, corn and beans, cook for 10mins. If you are going for vegetarian chilli add your extra beans now.
  4. Taste and adjust seasoning with chilli powder, salt and pepper.
  5. Serve with tortillas and sour cream.
  6. This can also be made in the slow cooker, just brown the meat and add everything to the slow cooker and cook on low for around 6hrs.
