Summary: Everyone remembers these from their childhood and those of you with young children will know ALL about them. I’ve seen plenty of efforts to ‘grow up’ chocolate crackles but I love them just as they are – well, almost. I have tweaked the level of cocoa and some times I add in chopped up chocolate bars or mini M&M’s or choc chips. I’ve made these when catering large, grown up cocktail parties and they always go down famously! Every time I make and eat them I remember how delish they are. If healthy eating is on your agenda you could use organic puffed rice and organic coconut oil instead.
Ingredients
- 4 cups rice bubbles
- 1 cup icing sugar
- 5 tblsp cocoa
- 1 cup desiccated coconut
- 250g copha, cubed
Instructions
- Melt the copha in the microwave till liquid and set aside.
- Add the rice bubbles and coconut to a large bowl.
- Sift in cocoa and icing sugar.
- Pour copha into dry ingredients and mix well.
- Spoon into paper patty cases and chill until set.
