Recipe: Chocolate Eclair Cake

Summary: Okay, maybe I’m taking liberties calling this a cake, perhaps it should be called a slice? Either way, this tastes just like an eclair and is therefore delicious! It was really rather easy, most of the time is in the chilling. I did this in stand mixer but you could use a bowl and electric beaters. This is a great ‘make ahead’ recipe and I can guarantee this will make you the most popular person at any gathering!

Ingredients

  • For the base:
  • 1 cups water
  • 1/2 cup butter
  • 1 cup flour
  • 1 tsp sugar
  • 4 eggs, room temperature
  • 1/2 tsp vanilla
  • For the filling:
  • 1 (250g) block cream cheese, softened
  • 300ml cream
  • 3/4 cup icing sugar
  • 3 tblsp Frangelico liqueur
  • 1/4 tsp vanilla
  • For the chocolate sauce:
  • 1 tblsp butter
  • 2 tblsp espresso coffee
  • 70g dark chocolate melts

Instructions

  1. Pre heat oven to 200C.
  2. Add the flour and sugar to the bowl of a stand mixer. Bring the water and butter to boil in a small saucepan on stove. Pour this into the flour mix and beat well, for at least a minute. Add the vanilla and the eggs one at a time, beating constantly.
  3. Spread the dough in a lined slice tin and bake for 25 minutes. The base should be lightly browned and will look puffed up and uneven. Allow to cool completely.
  4. While the base is cooling, beat the cream cheese and slowly beat in the icing sugar. Add the cream, Frangelico and vanilla and beat to combine. Pour the filling over the base and chill while you make the sauce.
  5. To make the sauce, heat the butter and coffee in a small saucepan until boiling. Remove from the heat and add the chocolate melts. Stir constantly until the chocolate is melted and the sauce is smooth. Allow to come to room temperature.
  6. Drizzle the sauce over the top of the filling and chill overnight. Cut into slices and serve right away.
