Recipe: Chocolate Peanut Butter Bars

Summary: Really not a health food but heaven all the same!

Ingredients

  • 400g chocolate (I use half dark and half milk)
  • 1 tblsp butter
  • 2 tblsp golden syrup
  • 150g peanut butter
  • 50g unsalted chopped peanuts (I use the kind you put on icecream)
  • 50g salted peanuts
  • 3 cups rice bubbles

Instructions

  1. Line a lamington tin with baking paper.
  2. In a large bowl, add nuts and rice bubbles.
  3. Melt the chocolate, butter and golden syrup in a double boiler or in the microwave.
  4. Whisk peanut butter in to chocolate and pour into rice bubble mix.
  5. Stir well to combine, you may need to get your hands in and smoosh it all together.
  6. Press into lined tin and chill. Remove from tin and cut into squares or bars or whatever shape you like.
