Summary: Chow Mein varies wildly between cook, some have meat or seafood and some are vegetarian. Here in Australia it seems every household has a version. This recipe is mostly snitched from The Bestie (hence the name) as this is not something Mummy Ask made when I was growing up. The Besties version includes 500g beef mince, which you would brown at the beginning before adding veg, if you want to include it. I used a 350g bag of stir fry veg (that included broccoli, cabbage, capsicum, carrot and zucchini) and some other veggies that needed using up but use whatever you have.
Ingredients
- 1 tblsp garlic oil
- 350g bag stir fry veggies
- 1 capsicum, chopped
- 1 pkt snow peas, trimmed & chopped
- 2 pkts 2 Minute Noodles
- 1 tblsp Massel Chicken Stock powder
- 1 tsp curry powder
- 1 tblsp corn flour
- 3 tblsp soy sauce
- 4 spring onions, chopped
Instructions
- Add the oil and veggies to a large fry pan. Stir in the curry powder and continue to stir often while you make the noodles.
- Break the noodle cakes up into 4 pieces and discard flavour sachet. Add the noodles and stock powder to a microwave safe bowl and cover with boiling water. Microwave for 2 mins and drain, reserving 1/2 cup of cooking liquid.
- Add the reserved cooking liquid to the veggies and stir. In a small bowl mix the soy sauce and cornflour to a very smooth paste.
- Once the veggies are cooked to your liking, add the soy & cornflour paste and cook for 2 mins. Add the noodles and spring onions and stir well.
