Summary: Coconut is such a wonderful thing! Here it stars in something like a biscuit but as easy to make as a slice. And no eggs in this one either.
Ingredients
- 200g brown sugar
- 150g SR flour
- 80g desiccated coconut
- 120g butter, melted
- For Icing
- 100g chocolate, finely chopped
- 1/4 cup cream
- 1 tsp vegetable oil
- Coconut for sprinkling
Instructions
- Pre heat oven to 180C.
- Mix all dry ingredients together and pour in butter. Mix to combine.
- Press into a small, lined slice tray and bake for 10 to 15 minutes until golden brown.
- Remove from oven and allow to cool. I find it easier to leave it in the tin until the icing is set.
- Heat the cream in a jug in the microwave until it comes to the boil.
- Add the chocolate and oil and whisk until it becomes a uniform mixture.
- Cover base with icing and sprinkle with coconut. Allow to set in the fridge before slicing and serving.
