Summary: A super tasty side dish, my current fave
Ingredients
- All measurements Approx
- 1 1/2 kg potatoes
- 1/4 cabbage, shredded
- 2 leeks, whites only, chopped
- Salt
- Pepper
- Butter
Instructions
- Peel and dice potatoes and boil in salted water until tender enough to mash.
- Drain and set aside.
- In the same large pot you boiled the potatoes in add butter, shredded cabbage and leeks and fry gently till tender.
- Add cooked potatoes and mash.
- Mix everything together and season well.
Variations
Left overs can be formed in to patties and dipped in beaten egg, then bread crubs and fried.
