Summary: I love coleslaw but I don’t like it to to overly sweet or have too much mayo. After a bit of fiddling around with quantities, I came up with this. It’s just perfect for my tastes but please adjust it to suit yourself. I’ve made this about eight times since I’ve perfected it and there’s never been left overs yet! It’s loosely based on KFC coleslaw but it’s far less sweet. This is the right amount of dressing for a 400g bag of pre prepped coleslaw veggies, of course you can chop your own. I always add a few chopped spring onions to my coleslaw and sometimes I add grated cheese too.
Ingredients
- 1/3 cup whole egg mayo
- 1/3 cup light sour cream
- 1 lemon, juiced
- 1 tblsp castor sugar
- 1/4 tsp free flowing salt
- 1/4 tsp ground pepper
Instructions
- Measure the mayo and sour cream into a 1 or two cup measuring jug. Whisk well.
- Add the lemon juice, sugar, salt and pepper. Whisk really well, until well combined.
- Pour over the coleslaw veggies.
- You can serve straight away but I like it best when it’s sat for an hour.
