 Recipe: Cool Ranch Taco Salad

Summary: I have a few food obsessions and this salad has so many of my fave things all in one dish. Beans, cheese, ranch dressing and even corn chips. I adore the wild things that (some) Americans add to dishes. I mean, corn chips in a salad? Crazy but so, so delightful. I have used black beans in this but I know they can be hard to find. If you can’t find them use kidney beans instead.

Ingredients

  • 100g mixed lettuce leaves
  • 400g cherry tomatoes, halved
  • 1 cup corn kernels, defrosted
  • 1 (400g) can black beans, drained and rinsed
  • 1/2 bunch spring onions, chopped
  • 60g cheese, grated
  • Ranch dressing, to taste
  • 75g natural corn chips, crumbled

Instructions

  1. Layer the ingredients in order on a serving plate or bowl. Or arrange each ingredient into a separate bowl to allow each person to select which items they want to add to their plate – like tacos!
  2. Dress the salad with ranch dressing and add the corn chips at the very last minute so that they stay crisp.
