Summary: Bacon, maple and corn. Such a good trio! This recipe comes from Stephanie Alexander.
Ingredients
- 3 cobs of corn (or 250g frozen)
- 2 cups plain flour
- 1 tblsp baking powder (yep, you read right)
- 1 egg
- 1 3/4 cup milk
- 1 tblsp melted butter
- 1 tsp salt
- Pinch chilli powder
- 2-3 Spring onions, finely chopped
- Handful of Parsley, finely chopped
- Butter or oil for frying
- Bacon, I allow 3 rashers per person
- Maple syrup to serve
Instructions
- If using corn on the cob, remove the husk and silk and either boil or microwave until just tender. Once cooled, cut the corn from the cob and discard cob. If using frozen either allow to defrost or cook till warmed through.
- In a large bowl add flour, baking powder, salt and chilli powder and whisk together.
- Add egg and milk slowly until a thick but smooth batter forms.
- Mix in corn, spring onion, parsley and butter and leave to rest at room temp for an hour.
- While you wait, line a baking tray with foil and lay out your bacon. Leave this in a cold oven till you are nearly ready to make the fritters. Turn on the oven (200C) when ready to cook and bake for 20mins or cooked to your liking.
- Fry the fritters in a little butter or oil on both sides and serve with bacon and maple syrup.
