Recipe: Craisin Cake

Summary: Grans Cherry Cake was well received by Mr Ask and he was definitely open to more ‘plain’ cakes in his life. He pondered the possibility of a Craisin version of Cherry Cake. So, I baked one and it was delicious with a slathering of good butter! As the cherries are so sweet and craisins are tart, I added a touch more sugar to this version. Aside from deliciousness, I love these cakes. No need to mess about with icing and they last well. I have fond memories of finding these cakes in my lunchbox but these days they are the perfect accompaniment to a pot of tea.

Ingredients

  • 140g butter
  • 160g castor sugar
  • 3 eggs
  • 225g plain flour
  • 2 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 120g craisins (dried cranberries)

Instructions

  1. Preheat oven to 170C, fan forced.
  2. Roll the craisins in a little flour, until well coated and set aside.
  3. Using beaters or a stand mixer, cream butter and sugar until light and fluffy.
  4. Add the vanilla, then add the eggs, one at a time.
  5. Add the flour, a little at a time until combined.
  6. Gently stir in the cherries and pour into a greased and lined loaf tin (4 cup capacity). Bake for 1 & 1/4hrs
