Summary: Grans Cherry Cake was well received by Mr Ask and he was definitely open to more ‘plain’ cakes in his life. He pondered the possibility of a Craisin version of Cherry Cake. So, I baked one and it was delicious with a slathering of good butter! As the cherries are so sweet and craisins are tart, I added a touch more sugar to this version. Aside from deliciousness, I love these cakes. No need to mess about with icing and they last well. I have fond memories of finding these cakes in my lunchbox but these days they are the perfect accompaniment to a pot of tea.
Ingredients
- 140g butter
- 160g castor sugar
- 3 eggs
- 225g plain flour
- 2 1/4 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp vanilla extract
- 120g craisins (dried cranberries)
Instructions
- Preheat oven to 170C, fan forced.
- Roll the craisins in a little flour, until well coated and set aside.
- Using beaters or a stand mixer, cream butter and sugar until light and fluffy.
- Add the vanilla, then add the eggs, one at a time.
- Add the flour, a little at a time until combined.
- Gently stir in the cherries and pour into a greased and lined loaf tin (4 cup capacity). Bake for 1 & 1/4hrs
