Summary: The hardest part of this project was making sure Mr Ask didn’t eat my decorations before the cakes were made! This is just a cupcake with chocolate buttercream, crumbled up flake and candy coated eggs. I used a 1A Wilton tip to pipe the icing and mostly M&M speckled eggs to decorate them. I think they are super cute! Plus they are pretty easy. You can make the cupcake any flavour you like or make it easier still and use a packet cake mix. No need to go buy a special piping tip either – just snip the off the tip of a disposable piping bag or the corner of a snap lock and pipe a blob in the centre (to glue down the eggs) and pipe a circle around it, at the edge of the cake. Sprinkle with flake and arrange your eggs. Happy Easter Lovelies!
Ingredients
- 125g butter, softened
- 125g castor sugar
- 125g plain flour
- 1/2 tsp bicarb soda
- 1 tsp baking powder
- 2 eggs
- 2 tsp vanilla bean paste
- 2 tblsp of milk
- 1 Qty buttercream icing
- Chocolate or candy eggs to decorate
- 1 Flake chocolate bar
Instructions
- Pre heat oven to 180C and line a 12 cup muffin tin with paper liners.
- Cream the butter and sugar in the mixer or with electric beaters, until pale and fluffy.
- Add the vanilla, milk and eggs, one at a time and mix by hand until well combined.
- Combine the flour, bicarb and baking powder and add to the batter in two additions, stirring until well combined.
- Use an icecream scoop to fill a muffin tin lined with paper patty pans.
- Bake cupcakes for 15-20 minutes, or until a skewer inserted into the center comes out clean.
- Allow to cool before decorating with buttercream and Easter Eggs.
- Makes an even dozen.
