
Summary: This is one of those perfect, busy life, kind of dishes. It’s quick, delicious and good for using up whatever’s floating around the fridge. I make mine vego and throw some cooked chicken or whatever into Mr Asks bowl. You can use what’s in your fridge, like kale, mushrooms, peas, tofu, dumplings, pea sprouts, bok choy, mint or include a soft boiled egg on the top.

Ingredients
- 3 cloves garlic, minced
- 1 tblsp canola oil
- 1 tsp sesame oil
- 1/2 tsp chilli oil
- 1 tblsp soy sauce
- 1 tsp rice wine vinegar
- 4-6 cups vegetable or chicken stock
- 2 cups frozen edamame in pods
- 2-3 handfuls baby spinach
- 1/4 red cabbage, finely sliced
- 1/2 bunch spring onions, sliced
Instructions
- Add the garlic and oils to a pot and cook for a minute, until the garlic is fragrant. Add the stock and bring to a boil. Add the edamame pods and cook for about 8 minutes. Remove pods with a slotted spoon and set aside.
- Add the ramen noodles to the stock mix, cooking according to package directions. Meanwhile, shell the edamame and arrange on a serving plate, along with all the other veg.
- Each person can select which veg to add to their bowls and then top with noodles and broth.
