Summary: Delish and a very similar texture to maple candy. Not a candy thermometer in sight!
Ingredients
- 3 cups brown sugar
- 3/4 cup cream
- 50g butter
- 2 tsp vanilla extract
- 1 cup chopped nuts (I used almonds, brazil and hazelnuts)
Instructions
- Add the cream and sugar to a saucepan, make sure it’s big enough to allow for everything to bubble up a bit. Stir everything together and bring to a boil and allow to boil without stirring for 5 mins and add butter.
- Once butter is melted, turn off the heat and add vanilla and nuts. Beat well by hand with a wooden spoon until the bubbles have disappeared.
- Pour into a lined tin, a small lamington tin or square cake tin and allow to cool. Cut or break into pieces and see how long it lasts!
