Summary: Who doesn’t love a hot cinnamon doughnut? These are really easy and addictively delicious. If I knew I could be making these so easily, I would have been doing it ages ago. Even easier if you have a deep fryer but you can use a saucepan with oil too
Ingredients
- 1 1/2 cups plain flour
- 1/3 cup castor sugar
- 2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup buttermilk or natural yoghurt
- 1 egg, lightly beaten
- 2 tblsp butter, melted
- Oil for deep frying
Instructions
- Add the flour, castor sugar, baking powder and salt to a large bowl. Add the egg, butter, vanilla and yoghurt/milk and stir well to combine.
- Heat a deep fryer to 190C (or heat vegetable oil in a saucepan) and drop heaped teaspoonfuls of batter into the oil, a few at a time. I got a great, round shape using a cookie scoop. Fry for until browned, 30 secs or so per side.
- Drain on paper towels and roll in cinnamon sugar or icing sugar or dip in an icing glaze. You can fill them with jam using a syringe from the chemist. They are lovely dipped in maple syrup or strawberry sauce.
