Summary: This is a great starter, brunch dish or light meal. I often do two at a time as they get snapped up quickly!
Ingredients
- 1 sheet frozen puff pastry
- 2 large onions, finely sliced
- 2 tblsp oilve oil
- 1 tsp brown sugar
- 1 tblsp balsamic vinegar
- 1/2 tsp fresh thyme or 1/4 tsp dried
- Salt
- Pepper
- 2 tblsp sour cream
- 30g grated cheese (I love parmesan or gruyere but whatever you prefer)
Instructions
- Preheat the oven to 200C (or 190 fan forced) and remove pastry from freezer.
- Add the oil, onion, brown sugar, balsamic vinegar and thyme in a frypan and cook on a low heat for 15-20mins, the onion should be very soft. Season with salt and pepper to taste.
- While the onions are cooking work on the base. Once the pastry is pliable, fold the edge of each side over to create a 1cm boarder. Press the folded edges with the tines of a fork to secure. Prick the pastry inside the border all over with a fork (this prevents it puffing up too much).
- Spread the sour cream over the pastry inside the border and top with the grated cheese. Spread the cooked onions over the sour cream and cheese.
- Bake in the oven for 15-20 mins until pastry is puffed and golden. Cut into slices and serve hot or warm.
