Recipe: Easy Onion Tart

Summary: This is a great starter, brunch dish or light meal. I often do two at a time as they get snapped up quickly!

Ingredients

  • 1 sheet frozen puff pastry
  • 2 large onions, finely sliced
  • 2 tblsp oilve oil
  • 1 tsp brown sugar
  • 1 tblsp balsamic vinegar
  • 1/2 tsp fresh thyme or 1/4 tsp dried
  • Salt
  • Pepper
  • 2 tblsp sour cream
  • 30g grated cheese (I love parmesan or gruyere but whatever you prefer)

Instructions

  1. Preheat the oven to 200C (or 190 fan forced) and remove pastry from freezer.
  2. Add the oil, onion, brown sugar, balsamic vinegar and thyme in a frypan and cook on a low heat for 15-20mins, the onion should be very soft. Season with salt and pepper to taste.
  3. While the onions are cooking work on the base. Once the pastry is pliable, fold the edge of each side over to create a 1cm boarder. Press the folded edges with the tines of a fork to secure. Prick the pastry inside the border all over with a fork (this prevents it puffing up too much).
  4. Spread the sour cream over the pastry inside the border and top with the grated cheese. Spread the cooked onions over the sour cream and cheese.
  5. Bake in the oven for 15-20 mins until pastry is puffed and golden. Cut into slices and serve hot or warm.
