Summary: A perfect breakfast or brunch dish
Ingredients
- Quantities are per person
- 2-3 large mushrooms, sliced
- 1-2 eggs
- 1 tsp milk or sour cream
- 1/2 tsp dried thyme
- Handful of chopped parsley
- Garlic olive oil (or regular oil and garlic)
- Salt
- Pepper
- 2 slices of toast
Instructions
- Fry the mushrooms in the oil with the thyme.
- Lightly beat the egg and milk/sour cream.
- Once the mushrooms are browned, add the parsley and pour over the egg.
- Stir around (think scrambled eggs) till the egg is cooked.
- Season with salt and pepper and serve on toast
