Recipe: Eggy Mushrooms on Toast

Summary: A perfect breakfast or brunch dish

Ingredients

  • Quantities are per person
  • 2-3 large mushrooms, sliced
  • 1-2 eggs
  • 1 tsp milk or sour cream
  • 1/2 tsp dried thyme
  • Handful of chopped parsley
  • Garlic olive oil (or regular oil and garlic)
  • Salt
  • Pepper
  • 2 slices of toast

Instructions

  1. Fry the mushrooms in the oil with the thyme.
  2. Lightly beat the egg and milk/sour cream.
  3. Once the mushrooms are browned, add the parsley and pour over the egg.
  4. Stir around (think scrambled eggs) till the egg is cooked.
  5. Season with salt and pepper and serve on toast
