Summary: This is total simplicity. Mr Ask had a craving for something chocolate and I came up with this. Perfect for when you are in a hurry or can’t be bothered to grab the beaters or get the mixer out but need some gooey indulgence. Plus the cake can be iced warm.
Ingredients
- 150g SR flour
- 200g brown sugar
- 150g chocolate melts (dark or milk)
- 3 tblsp cocoa
- 2 eggs
- ½ cup milk
- ½ tsp vanilla
- 50g butter, melted
- Ganache Icing
- 85g chocolate, finely chopped
- 1/4 cup cream
- 1 tsp vegetable oil
Instructions
- Preheat oven to 180C.
- Add all dry ingredients to a mixing bowl and stir together.
- Add eggs, milk, vanilla and butter. Mix thoroughly until well combined.
- Pour into a greased and lined cake tin and bake for 25-30 mins or until a skewer JUST comes out clean. It will probably fall in the middle but thats just fine.
- Allow to sit in the tin for 15 mins before turning out on to a plate.
- Ganache Icing
- Heat the cream in a jug in the microwave until it comes to the boil.
- Add the chocolate and oil to the cream and whisk until it becomes a uniform mixture.
- Pour over the cake and serve warm or cooled and set.
