Summary: I was in the mood for beans when I made this. Mr Ask is less of a bean fan but he says that this my best ever soup! Yeah, he said best ever! I think it may be the generous amount corn, which is one of his faves but either way is super easy and amazing.
Ingredients
- 1-2 tblsp olive oil
- 1 red onion, chopped
- 1 clove garlic, minced
- 140g tomato paste
- 2 cups corn kernels
- 2 small capsicums, chopped
- 1 (400g) can 4 bean mix, drained & rinsed
- 1 (400g) can kidney beans, drained & rinsed
- 1 tsp celery seeds
- 4 cups vegetable stock
- Vegetable stock powder, to taste
- Hot sauce, to taste
- Pepper, to taste
Instructions
- In a large soup pot, sauté the onion in the olive oil over low heat until the onion is translucent.
- Add the garlic and tomato paste and sautée for a couple of minutes. Add the stock and then all other ingredients.
- Bring the soup to a gentle boil and cook until the veggies are cooked to your liking.
- Season to taste with stock powder, pepper and hot sauce. Serve with a sprinkle of cheese and coriander.
