Ingredients
- 1 lg shallot or a couple of spring onions
- Butter
- 1 small cos lettuce shredded
- 2 cups frozen peas
- 1/2 cup chicken or veg stock
Instructions
- Fry the chopped shallot in a good amount of butter, add shredded cos lettuce .
- Add a couple of cups frozen peas and a little chicken stock (up to 1/2 cup) and stew till lettuce breaks down and peas are tender.
- Season with salt and pepper to taste.
