Summary: This is my favorite cordial so far and it is the perfect thirst quencher on a warm day. Nothing but water, sugar and fruit.
Ingredients
- 1 kg castor sugar
- 1 litre boiling water
- 1 tblsp citric acid (from baking isle in supermarket)
- 1 ruby grapefruit
- 4 oranges
- 2 lemons
- 2 limes
- 6-8 passionfruit
Instructions
- Add the sugar and boiling water to a large saucepan and stir until sugar is completely dissolved, you may need to heat the saucepan on low to achieve it.
- Use a grater to zest 2 oranges, 1 lemon and 1 lime.
- Add citric acid and zest and stir well. Juice the citrus fruits (you should have 2 to 2 1/2 cups of juice in total) and remove the passionfruit pulp from the skins, add to cordial and stir well. Allow to cool.
- Store in a sterilized bottles or in my case my trusty Tupperware jug. Store in the fridge.
- Makes 2 litres
