Summary: I love spinach but Mr Ask is not such a fan. Chopping the spinach means you don’t get stringy bits that put some people off. I think spinach and lemon are a wonderful combo that will tempt those that aren’t such fans. It’s also a nice, quick weekday meal. Please, please taste and season generously, spinach needs it.
Ingredients
- 250g spiral pasta
- 100g baby spinach
- 2 tblsp oil
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1/4 tsp dried chilli flakes
- 1 cup frozen peas
- 1 lemon, juice and zest
- 1/2 cup cream
- Black pepper
- Salt
- Parmesan, to serve
Instructions
- Finely chop the spinach or give it a whizz in the food processor until chopped like you would a herb.
- Cook the pasta to packet directions and prepare the sauce while it cooks.
- Add the oil, onion, chilli flakes and garlic and sautée till soft.
- Add the spinach, frozen peas, lemon zest and juice and cook, stirring often till peas are cooked through.
- Add the cream and season well. Cook until the cream is hot through and add the cooked, drained pasta.
- Serve with a good heaping of Parmesan.
