Summary: How cute are these donut cupcakes? Everyone who’s seen them in real life says they are so Simpsons, which is really peak donut! They are so fun and colourful, they really are very festive. They are perfect for a party or celebration. I made these for my nephews birthday, along with the jam donut cupcakes I posted most recently. I made loads of these mini donuts (recipe here) for everyone to eat and used a few to decorate these cupcakes. The cupcakes are just vanilla cupcakes but you could go with any flavour you fancied. Ingredients
- 1 Coles 75c butter cake mix
- 2 eggs
- 1 tsp vanilla bean paste
- 2/3 cup light sour cream
- 3 tblsp vegetable oil
For the buttercream frosting
- 250g butter, softened
- 500g icing sugar
- 1 tsp vanilla extract
- 1-2 tblsp milk
- 1 batch mini glazed donuts
Instructions
- Preheat the oven to 160C and line a 12 cup muffin tin with paper patty pan liners.
- In a large bowl, add the cake mix followed by the eggs, vanilla, sour cream and oil. Whisk together until smooth and glossy. Divide the batter between the 12 patty pans.
- Bake for 15-18 minutes (mine are always perfect at 17 mins) or until a skewer comes out clean. Allow to cool completely on a rack before frosting.
- To make the buttercream frosting: Place the butter in the bowl of a stand mixer with the paddle attachment (or with electric beaters) and beat until smooth.
- Add the icing sugar, vanilla and milk and mix on low to incorporate and then beat on high for at least 5 mins. Buttercream should feel silky and should have increased in volume.
- Pipe frosting onto cupcakes and top with a glazed donut.
