Recipe: Green Bean & Celeriac Pasta

Summary: A Mr Ask creation! I do love it when he cooks as he is fab at it plus I didn’t have to (everyone deserves a rest). Just amazing flavours and in saying that it has plenty of butter (a fave indulgence around here) but is worth every calorie.

Ingredients

  • 300g green beans, chopped into 2cm lengths
  • 1 celeriac, peeled & chopped into batons
  • 1 clove garlic, minced
  • 100g butter
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp ground cumin
  • 1/4 tsp black pepper
  • Vegetable stock
  • 250g dried long pasta
  • Parmesan to serve

Instructions

  1. Cook the pasta in the stock until al dente and drain.
  2. While that’s happening, melt the butter in a large fry pan and add the garlic and celeriac. Gently sautée until celeriac is softening, about 10 mins.
  3. Add the spices, herbs and beans to the celeriac and continue to sautée till celeriac is quite soft.
  4. Add the drained pasta to the veg and toss well.
  5. Serve with plenty of Parmesan.
