Summary: A Mr Ask creation! I do love it when he cooks as he is fab at it plus I didn’t have to (everyone deserves a rest). Just amazing flavours and in saying that it has plenty of butter (a fave indulgence around here) but is worth every calorie.
Ingredients
- 300g green beans, chopped into 2cm lengths
- 1 celeriac, peeled & chopped into batons
- 1 clove garlic, minced
- 100g butter
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
- Vegetable stock
- 250g dried long pasta
- Parmesan to serve
Instructions
- Cook the pasta in the stock until al dente and drain.
- While that’s happening, melt the butter in a large fry pan and add the garlic and celeriac. Gently sautée until celeriac is softening, about 10 mins.
- Add the spices, herbs and beans to the celeriac and continue to sautée till celeriac is quite soft.
- Add the drained pasta to the veg and toss well.
- Serve with plenty of Parmesan.
