Summary: I adore haloumi, I call it bacon for vegetarians. This haloumi was hand made by my group during the cheese making course I went to recently. If I master it at home I will certainly share the recipe but shop bought is more than fine. Haloumi is deliciously salty and the sweetness of the peppers and onions gives a wonderful contrast.
Ingredients
- 300g haloumi
- 1 small red capsicum, sliced
- 1 small green capsicum, sliced
- 1 small onion, sliced
- 1 tblsp maple syrup
- Olive oil
Instructions
- Add the capsicums and onions to a fry pan with a couple of tablespoons of oil. Fry gently for 10 or so minutes. You are looking for everything to soften and lightly caramelise, no crisping and burning!
- Once everything is soft, turn off the heat and stir in the maple syrup. Set aside while you fry the haloumi.
- Fry the haloumi in the same pan well wiped out with a couple of tablespoons of olive oil. Brown on both sides and serve on a bed of capsicums and onion.
- Serves 4 as a starter
