Recipe: Homemade Flour Tortillas

Recipe: Homemade Flour Tortillas
Summary: Mr Ask and I enjoy cooking together on the weekend. We were planning a big chilli cook up and Mr Ask decided to make tortillas. They were so amazing I will never eat store bought again. We me made a double batch but I think we will make a huge batch next time and freeze them. They’re just that good! I highly recommend giving these a go!
Ingredients
  •  2 cups plain white flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 125g butter, softened
  • 3/4 cup warm water, more or less
Instructions 
  1. Combine the flour, salt and baking powder and butter in large mixing bowl. Rub in the flour with your fingers until the mix resembles bread crumbs. Or use your stand mixer to do this!
  2. Add  the 3/4 cup warm water and use your hands to mix everything into a dough. If the mix is sticky, add more flour of if it is too dry, add more water.
  3. Knead the dough on a floured surface for a few minutes until no longer sticky; the dough should feel smooth, elastic and not dry. If you have a stand mixer with a dough hook, you can use that instead.
  4. Divide the dough up into 8-10 balls (I just divide in half and then in half again until I have the right amount) and arrange on a lightly greased baking tray.
  5. Lightly dampen a tea towel with warm water, cover the dough and let rest for 20 minutes.
  6. Using a rolling pin, shape the flour tortillas into thin round circles about 14cm in diameter.
  7. Heat a heavy based fry pan on a medium heat, lightly grease it to avoid sticking but don’t go nuts! Cook the tortillas until bubbles form and brown specks appear, about 1 minute. Turn over and cook other side, about another minute. Continue cooking all the flour tortillas in the same manner.
  8. Keep tortillas warm, stacking them one on top of the other until ready to serve. Use a dampened tea towel to stop them from  drying out! We laid a damp tea towel in a large lidded frypan and kept the lid on. Once they cool, later them with baking paper,  wrap in plastic and store in a Tupperware container in the fridge until you need them. Wrap the in foil and warm in the oven when you’re ready to use them, or you can freshen them up in the microwave (or  in a fry pan for a few seconds), too.
  9. Makes 8 tortillas.
Quick Notes:
Tortillas freeze beautifully. Layer plastic wrap, baking paper or tin foil between each tortilla. By putting layers between each tortilla you can thaw just the amount you need at any time. Place the  tortillas in a plastic freezer bag or Tupperware container with a label and date. Freeze for up to two months. Thaw in the fridge, on the counter top or by reheating them in the microwave or stove top.
