Recipe: Homemade Raffaellos (Coconut Truffles)

Summary: For those you who are not fans, Raffaellos are the coconutty version of a Ferrero Rocher. I am a fan, a big fan, I could eat a whole family box on my own fan. These are not exactly the same but I think they’re pretty tasty all the same. An upright mixer makes these super easy but a big bowl and electric beaters works too. I used moist coconut flakes, if your coconut is dryer you may need less icing sugar.

Ingredients

  • 50g butter, softened
  • 125g cream cheese, softened
  • 1/2 tsp vanilla
  • 1 tsp coconut essence
  • 450g icing sugar
  • 170g flaked coconut plus extra for rolling
  • 45 blanched almonds

Instructions

  1. Beat the butter, cream cheese, vanilla and coconut essence until really smooth and well combined.
  2. Add the coconut flakes and icing sugar and beat until well combined. It will take a few minutes.
  3. Roll into tablespoon sized balls with an almond in the centre. A 1 tablespoon cookie scoop makes this step so much quicker.
  4. Roll the balls in the extra coconut and serve.
  5. Makes approx 40, it depends how much you eat as you go lol!
