Summary: For those you who are not fans, Raffaellos are the coconutty version of a Ferrero Rocher. I am a fan, a big fan, I could eat a whole family box on my own fan. These are not exactly the same but I think they’re pretty tasty all the same. An upright mixer makes these super easy but a big bowl and electric beaters works too. I used moist coconut flakes, if your coconut is dryer you may need less icing sugar.
Ingredients
- 50g butter, softened
- 125g cream cheese, softened
- 1/2 tsp vanilla
- 1 tsp coconut essence
- 450g icing sugar
- 170g flaked coconut plus extra for rolling
- 45 blanched almonds
Instructions
- Beat the butter, cream cheese, vanilla and coconut essence until really smooth and well combined.
- Add the coconut flakes and icing sugar and beat until well combined. It will take a few minutes.
- Roll into tablespoon sized balls with an almond in the centre. A 1 tablespoon cookie scoop makes this step so much quicker.
- Roll the balls in the extra coconut and serve.
- Makes approx 40, it depends how much you eat as you go lol!
